Baking Mac Without the Cheese

I miss cheese. It’s the one thing I haven’t quite found a substitute for. Most of the vegan cheeses at my local market contain caseins and therefore aren’t completely dairy-free for the food allergic. One product that is dairy-free and works well is Daiya; its my go-to when I can’t go without, like on pizza.

Or the baked Mac and “Cheese” recipe I tried for lunch today.

Dairy Free Mac and Cheese

I was inspired by the novel Julia’s Child by Sarah Pinneo about a mom who makes and sells organic food for toddlers. There are several recipes sprinkled throughout the book, including one for “Mac and Cheese With Plenty of Dairy.”

Its like the title challenged me to make it without dairy.

Most of the substitutions were easy, with the exception of cottage cheese. I have not found a dairy-free cottage cheese. (If you know of one, please share.) So that’s where I started to improvise.

It turned out pretty and tasted fine but I want to work on the recipe before I share it. I kind of threw it together with ingredients I had on hand. I promise I’ll share when its ready.

Where do you dream of vacationing? A sandy beach? A hip and happening city? A mountain retreat?

I’ve been dreaming of Disney.

Seriously.

I really want to run the Disney Wine & Dine Half Marathon. Early registration ends today, though, and I don’t see it the budget cards for me this year.

I also really want to take my son. Not just because he’d love to meet Mickey and the gang but because I hear Disney is a fabulous destination for kids with food allergies.

Food Allergy Friendly Fruit Cobbler

Our Food Allergy Journey Continues

Its so fitting that this week is Food Allergy Awareness Week. Because I am aware and I am taking action.

Or trying to.

Its hard. I’ve been down this road before so I should know my way but I’m in denial. I was so hopeful we wouldn’t have to travel this path again.

Less than two months ago, there was light at the end of the food allergy tunnel for my son. He passed his peanut challenge. And his doctor thinks he’ll likely outgrown his milk and egg allergies within a year or two.

Hooray!

Then eczema reared its ugly head again.

Boo!

This time on my daughter. And I feel like we are back in the dark.

If I’m honest with myself, I knew the signs the first time around. But I tried to ignore them. I didn’t want to face that reality.

I’ve been doing it again – ignoring the signs. But no more.

I’ve cut out dairy completely.

I stopped eating eggs.

I avoid nuts.

I am at a loss, though, as to how to eliminate soy and wheat, if that’s even the cause.

I’ve got three months until we can wean, although, I know the road doesn’t end there.

So we wait. And hope. And take it one step at a time.
